On iOS: Scroll up in the chat list to reveal archived chats. Tap it, then swipe left on the chat to restore it. And click on Unarchive.

On Android: Tap Archived Chats at the bottom of the chat list.

And tap and hold on the chat you want to restore instead of selecting the Unarchive icon.
