Summer, which is summer, must have ice cream. Whether to cool off on the hottest days, as a dessert or to celebrate special occasions, ice cream is a characteristic part of this time of year.
However, even if you are on vacation and more relaxed, you should pay attention to the food you eat. For example, an ice cream can be cream-based, which will provide more fat, milk or yogurt-based, an option with good quality proteins and less fat, or be exclusively fruit-based. The rest of the ingredients can be different, and make the ice cream more or less caloric.
The benefits of fruit ice cream
Fruit consumption in Portugal is below the recommendations. Therefore, strategies that promote the intake of these foods are necessary and welcome. Fruit-based ice creams can be part of these strategies, promoting fruit consumption in an attractive way.
These ice creams can range from options made exclusively with crushed and frozen fruit, or combined with other ingredients. When that’s the case, it’s important to make good decisions.
What fruits can you use?
In theory, you can use any fruit to make ice cream. However, the best choices are seasonal fruits, as they are more widely available and will be sweeter and more flavorful from the start.
Good options are, for example, red fruits (strawberries, raspberries, blackberries and blueberries), peach, cantaloupe, cantaloupe, watermelon, papaya, pineapple, banana, cherry or mango. If you prefer, you can also substitute fruit for Compal options, such as juices and nectars or fruit snacks.
Now that you know some of the benefits that can be associated with fruit ice cream, we leave you with three suggestions for healthy and delicious recipes.
Yogurt ice cream recipe with red berries and granola (9 servings)
Ingredients:
• 330 ml of Compal Essential Fruit Dose of Red Fruits
• 300 g plain light Greek yogurt
• Strawberries
• Big wave
• 2 tablespoons of honey
Preparation:
1. Start by distributing the Fruit Essential Doses of Frutas Rojas de Compal among the molds and place in the freezer for about 15 to 20 minutes (until it is a little more solid);
2. Remove stems from strawberries, cut into smaller pieces and set aside;
3. Mix the honey with the Greek yogurt and mix well;
4. Prepare the ice cream. Put a little yogurt in each mold, then strawberries and some more yogurt. Finish with granola;
5. Place a popsicle stick in each mold and place in the freezer for at least 2-3 hours before serving.

Fig and mango ice cream recipe (6 servings)
Ingredients:
● 400g of natural vegetable yogurt
● 140 ml of Compal Bio Fig Piteira Apple Lemon
● 300 g of diced mango
Preparation:
1. Mix the vegetable yogurt well with the Compal Bio Figo Piteira Apple Lemon
2. Involve the mango in the previous mixture and pour it into a bowl;
3. Put in the freezer for about 3 hours.

Pina colada ice cream recipe (6 servings)
Ingredients:
- 300g coconut drink
- 70 ml of Compal 100% Pineapple Pear Fruit
- 200g pineapple
- 30g dehydrated coconut, grated
Preparation:
1. In a blender, grind all ingredients except dried coconut;
2. Involve the coconut in the mixture and distribute the mixture in the ice cream molds;
3. Place a popsicle stick in each mold and place in the freezer for at least 3 hours before serving.
