It is applauding. It received its first Michelin star at the end of 2021, just six months after opening its doors, in June of the same year. At the helm of Al Sud, the fine dining at the ClubHouse of the five-star Palmares Ocean Living & Gold resort, is Louis Anjos, a chef who had already received the prestigious distinction for his previous performance at the Bon Bon restaurant, in Carvoeiro, in Lagoa. With the promise of providing a true gastronomic experience, the menu combines the creativity of signature cuisine with Portuguese culture and local products., thus giving great prominence to what comes to us from the sea. With views of the Bay of Lagos and the Alvor estuary, the menu includes two tasting menus, one for six moments and the other for ten, which, among many surprises, include oysters from the Aveiro estuary, rooster fish with açorda and roe and the Iberian pork plume.

These are some of the species that make up the list at Escama, the new space in the center of Faro that promises to bring “the best that Ria Formosa has to offer” to the table. The counter is reminiscent of a market square: made of marble, it shows the product coming directly from the auction house, preserved on ice, so that the customer, as when making a purchase, can observe and choose. The difference is that you don’t have to cook it, you can eat it right there, even choosing the way you want it cooked.
